2022 Chalk
100% Grenache. While we had played around with sparkling side projects in the past, in 2022 we decided to take things a bit more seriously. We pivoted from pét-nat to méthode champenoise, using early-harvest Grenache from Block 1 that was aged in barrel for a year before being bottled en tirage. A secondary fermentation in bottle gifted the wine natural effervescence, followed by three years resting on its lees, building texture, complexity, and the subtle brioche-like character that comes with extended lees aging. The wine was then disgorged, removing the spent yeast while preserving the bubbles and character developed over all those years in bottle.
The result is a pale straw-gold buzzing with tiny, persistent bubbles. Crisp pear and apple peel leap out of the glass, followed by Meyer lemon and warm, toasty brioche. A whisper of white strawberry, then it's a long, salty, chalky finish that has us reaching for oysters, a basket of fries, or honestly just another glass. It took more hands, more time, and more patience than anything we've ever made, and we couldn't be more excited to share it.
